spelt bakery

Joyful news from Wholefoods, Cary N.C.!Our Wholefoods bakery is going to have fresh made bakery items with spelt!I hope all Wholefoods are doing this.Has any one been to a bakery with spelt cookies, buns, breads, muffins........for the fresh munching?

    Does anyone in this tribe have info on wheat allergies/intolerance? i have been wheat intolerant for about 6 yrs now...what is the wheat intolerance about?

      I don't know about that, but the Ayurveda diet is wheat free.
      So if your allready Ayrurvedic (I don't know if that's a word),
      you most likely stoped eatting a wheat a while ago.
      But, for my husband and I spelt breads and cookies are so delishious that we don't miss wheat.

          It's not like Adkines or South Beach, it is Ayurveda.Which means the science of life.My husband and I began by visiting an Ayurveda Dr.He gave us herbal suppliments and asked us to begin eatting acording to the Ayurveda way.He gave us a booklet.We visited thousands of web sites, bought three cook books, and joined chat groups like this.It's very differant from how most Americans grow up eatting.It's very differant from how we were taught about food too.
          If you don't start by seeing a Ayurveda dr.(which is kinda pricey, but worth it)beging to eat this way (which is 90% of the science of life) will give you great benefits!
          An easy to follow book that I bought at Wholefoods is The Ayurvedic cookbook by Amadea Morningstar and Urmila Desai.
          It's all Indian cooking.They say in another book I have that Indian cooking is based on Ayurveda.
          The reason for this change in our life was due to my husbands constant indigestion.Even water gave him heart burn!We were willing to try any thing!We've been doing this for 6 weeks now and we're glad we did.
          Some things that go back to your situation is, the diet is gluton free, no refined sugars, no yeast or formented foods, no processed foods,no beans,only use basmati rice, no milk (soy milk is o.k.), no aged cheeses..............
          The idea is that when you start feeding yourself right alot of other things are able to fix themselves.Your body isn't waisting so much time digesting all those odd things.
          I still have alot to learn and I hope some other peeps here will chime in.
          Even just trying the spelt bread and spelt flour may give you all the joy you need.

            i have been eating spelt for a few years now. its interesting to me how something so similar to wheat would have such a milder effect on the body.

                Its not that an Ayurvedic diet cuts out wheat for everyone, it is avoided by those of Kapha constitution, those with kapha problems, and is to be reduced during the spring (or cool and wet season).
                Wheat can be beneficial to a vata constitution, help them bulk up and increase their moisture holding in the body. It is also better when taken during the winter (or cold and dry season).

                Dairy follows these same rules in Ayurveda. I myself go Vegan in the spring and summer but take dairy in the fall and winter.

                Each diet is individualized, we are all different.

                  I'm Vata and my Ayuervedic Doctor eliminated wheat on my diet and suggested spelt. However I agree, usually, according to the basic Ayuervedic (dosha) diet--wheat is good for vata. My theory is though, many of us weren't breast feed as babies and due to our environmental influence plus typical lousy diets--some have damaged their immune system to the point there are times when vatas don't need wheat (gluten)either. Although spelt contains gluten--in small amounts it's better tolerated.

                  I'm very impressed with my Doctor and his treatments and even more so the fact he adjusted the "usual" Ayuervedic recommendation via intuition----And yes absolutely, diet is individualized, we are all different. *smile*

                    i test out as a pitta/vata with slight kapha, and the other night i (unknowingly) re-verified for myself that i CANNNOT eat gluten.

                    for anyone that doens't know, the third ingredient in Bocca burgers is WHEAT GLUTEN.

                    my stomach swelled like someone blew up a balloon in my gut, and i was writhing in pain for hours.

                      *just wanted to revive this thread since i have been going through similar transitions with wheat*

                      I am heavily kapha consititutions and i just made an agreement with my honey who is also kahpa-type that we aren't going to buy and wheat products at home...since both TCM and now Aryvedic see it as a very watery-dampening food.

                      We will on ocasion, when out, eat it....oh, how i miss bread sometimes.....but i love spelt (make me look up some recipes! or if anyone has any recomendations!) and just eat brn rice....quinoa..etc....

                      so, what are the best complex carbs for kapha?

                        To answer your question, if you are ready to try something new, you may try a grain called bajra or bajri. This is widely used in my part of india. We make a kind of pancake out of this. You can also cook it as rice. Another grain is javar or jvari. Use is similar to bajri. These two grains are considered easy-to-digest. Another option (which is best in my experience) is using rice pops. You may cook these after soaking in water, or you may fry with a little ghee.

                        The symptoms of this particular syndrome (wheat intolerance) are usually similar to the condition described as Grahani in ayurveda. Although the doshas vary according to individual etiopathological factors, improving the agni is most important. See my recent post on digestion for details. cmthite@gmail.com

            Usha and Vasant Lad's cookbook is yummy. Their subji recipies are wonderful.
            my 2 cents about cookbooks.
            we've got several spelt options at the several bakeries here (Asheville NC). to respond to the original question(!)
